The place called "Schlossreben" has old vines more than 40 years old. Siliceous soil, underground clay marney, which gives the wines strength and nobility.
The grapes are harvested by hand and pressed directly in a pneumatic press for approximately 8 to 10 hours.
The juice flows by gravity into the fermentation vessel, where it is fermented naturally with native yeast.
After fermentation, the wine remains on the coarse lees for at least 6 months before being bottled straight from the tank.
